"Guay Jub Uan Phochana" (in front of an old cinema), Yaowarat, has been selling for 100 years from grandfather to grandson. Recommended in Michelin Guide for 5 years. Guay Jub is a bit different from Guay Tiew (noodle soup) in many aspects. Firstly, the noodle itself is totally different. The noodle in Guay Jub is soft and chewy, flat, white, and rolled when boil. The soup is also different. The Guay Jub soup is very rich pork bone broth, fragrant, and very very peppery. So it's really hot, peppery hot, not chili hot (so most people are OK with it), but after eating, it's really refreshing. Fresh, clean pork offal and crispy pork that are very delicious. If you are in Bangkok and visit the chinatown, this stall is the must. You can't miss it.

Guay Jub is a popular Thai street food dish that consists of rolled-up rice noodles in a flavorful soup broth, served with a variety of toppings. The dish is known for its unique combination of textures and flavors, and is typically enjoyed as a hearty breakfast or lunch option.

The rice noodles used in Guay Jub are made from rice flour and water, and are typically rolled up into thin, cylindrical shapes. These noodles are then added to a savory broth made with pork bones, garlic, and other herbs and spices. The broth is simmered for several hours to develop a rich, complex flavor.

In addition to the noodles and broth, Guay Jub is typically served with a variety of toppings. These can include sliced pork, pork offal such as liver or intestines, fried tofu, hard-boiled eggs, and fresh herbs like cilantro or scallions. Some variations of the dish may also include crispy pork skin or Chinese-style fried dough.

To enjoy Guay Jub, diners typically add their desired toppings to the soup, along with a spoonful of chili sauce or vinegar for added flavor. The dish is often accompanied by a side of crispy fried wontons or fried dough sticks for dipping into the soup.

Overall, Guay Jub is a flavorful and satisfying Thai street food dish that offers a delicious combination of textures and flavors.
